Hi
What I would like to be able to say is for a given page that it get
automatically time-stamped with the lats update.

And with the username, once we get users. I normally don't care about
the IP address of who changed the page :-)

Everything you ask for is already there: Each time a new version of an
structure-item is generated, the new version number, a time-stamp and
the username (if available) is assigned.
When you have a look at the version of a structure-item, you will see
all this information presented there. If I am not wrong you should even
see the date of the last change when editing a page.
